Ligonier Study Center Manicotti

For one semester in her sophomore year of college, Sue studied Christian Apologetics at the Ligonier Valley Study Center. It was a live-in family experience and this recipe is from the collection the Center published at the student's request. For a number of years this was the Donley family traditional Christmas Eve supper.

One Recipe Crepes or one box manicotti pasta (If using pasta, cook according to directions, drain and rinse in cold water).

1-1/4# Mozarella Cheese, diced
1-1/2# Ricotta Cheese
3 Eggs
1-1/4 cups grated Parmesan Cheese
Pepper, Salt, Parsley
Mix together and use to stuff crepes or tubes.

Put 2 tablespoons of sauce in bottom of greased baking dish. Place filled crepes or tubes in pan. Pour 2 cups sauce over top.

Bake at 350 degrees for 25-30 minutes.

Makes about 22-25 crepe tubes.

Cook macaroni according to package directions. Drain and rinse in cold water. Mix rest of ingredients and use to stuff the pasta tubes.

SAUCE:
2 cups purchased or homemade sauce to cook crepes with and extra to serve with.
HOMEMADE SAUCE:
1 lg. can tomato puree
1 can water
1 tsp. salt
1 tsp. oregano
1 tsp. parsley
Mix and cook over low heat for one hour.
